Ever since Tyler and I made pizzas last month, I’ve been wanting to involve him more in cooking since he enjoyed it so much. So after much googling, I ordered the Annabel Karmel ‘My Favourite Recipes’ book online for some ideas on toddler cooking. This week we tried the ‘Salmon Fishcakes’ and I can tell you now it was a great success 🙂
I prepped all the ingredients first which were:
- A drained and mashed 212g tin of pink salmon
- 2 spring onions chopped up
- A lemon cut in half
- Dried breadcrumbs (I ovened 2 slices of bread on low heat for 10 mins, and then crushed with a rolling pin) – put on a plate
- Plate of flour
- 1 egg beaten in a bowl
- Bowl of cooked frozen peas (see the boy tasting the peas in the photo!)
We put the salmon and spring onions in bowl, squirted on some ketchup and mayo, and Tyler squeezed the lemon over it for some lemon juice. He really got into squeezing this lemon! I mixed it all up with my hands (Tyler did not want to put his hands in it!), and made 6 balls.
Yes he’s still squeezing that lemon!
Next we put our flour, egg and dried breadcrumbs in a row to make a sort of assembly line.
I rolled each fishcake in flour, dipped it in the egg and rolled in breadcrumbs. I then shaped them into fish shapes and put a pea in for an eye.
Now my fishcake were not sticking together very well, I now realised that I forgot to put fresh breadcrumbs in with the salmon and spring onions at the beginning. So add that in if you’re going to try this!
I fried the fishcakes in a large frying pan with sunflower oil, 1 and a half minutes on each side. Now they did look blackened, but they actually weren’t burnt and tasted good! Here is Tyler’s plate of dinner.
And he ate all of them! I had to break them into little pieces as he wouldn’t eat them whole – maybe because they looked like fish, who knows why?! – but as this was his first time ever eating salmon, I’d say this was a success! And the boy had loads of fun ‘helping’ me cook. Why don’t you give it a go?

These look yummy! I have some of her baby recipe books but really should upgrade to the toddler one now my girl is 3 1/2 years old. I really do love her recipes.

Oh they look great! I don’t think Luke’s ever eaten salmon as I don’t eat fish. Is the book worth it do you think? I have the worlds most fussy eater and I’m desperate to try and fix things up for him! Ray xx #toddlerapprovedtuesday

Thank you! Sorry for the late response. Yes I totally understand the fussy eater thing – Tyler only eats plain pasta (no sauce!), chips, cucumbers and chocolate muffins – everything else feels such a struggle. Still I was so surprised he ate the salmon, so just got to persevere! I’m not sure if the book is worth it, a lot of the recipes are ordinary adult recipes with children cooking them in the photo. You can get the same recipes online. But it’s nice to have it all in one book xx
