The other week you may have seen me making pink cupcakes and bunting. Now this was all for a Big Pink Event at my workplace, raising money for Breast Cancer Awareness, and to launch a new insurance product, Female Cancer Cover. We all made cakes and sweets to sell, and I made Pina Colada cupcakes and Pink Lemon Meringue cupcakes. Both were a hit, but in particular, everyone was curious as to how I made the Pina Colada cupcakes. So I thought I’d share the recipe with you!
For the batter, you need:
200g Plain Flour, sieved
1 ½ tsp Baking Powder
½ tsp salt
200g Unsalted Butter, softened
200g Caster Sugar
3 tsp Rum Flavouring (or you can use real rum if you like!)
85g Tinned Pineapples, mashed with a fork
For the frosting, you need:
3 Egg Whites
200g Granulated Sugar
2 tsp Coconut Flavouring
1 tsp Pink Food Colouring
Sprinkles and Cocktail Umbrellas to decorate
In one bowl, mix the flour, baking powder and salt. In a separate bowl, mix together the butter and caster sugar till it’s light and fluffy. Mix in the eggs one at a time, and then the rum flavouring. Mix in the milk and half of the flour mixture. Then mix in the rest of the flour. Finally fold in the mashed pineapples and that makes your batter. Using a muffin tray lined with 12 muffin cases, pour in the batter and bake in a preheated oven at Gas Mark 4 for 20 minutes.
For the frosting, melt the granulated sugar into the eggs whites in a heat-proof bowl over a saucepan of simmering water. Once it has totally dissolved, take it off the heat and use an electric whisk to whisk it for about 10 minutes until it is thick. Add in the coconut flavouring and pink colouring. Put the frosting into a piping bag with a star nozzle and pipe onto the cooled cakes. Add on the sprinkles and cocktail umbrella for the finishing touch!
These really do taste good, alongside the other goodies from the day.

Altogether we raised £351 for Breast Cancer Awareness, a great result from just cakes and a tombola! As I mentioned above, the reason my company decided to fundraise for this charity was not only because October is Breast Cancer Awareness month, but also to launch their new insurance product Female Cancer Cover, by NowSure. It’s quite an interesting product, as obviously nobody wants to get cancer, but it’s a just in case precaution to help with finances if you were to get ill. And a good excuse for me to make pink leaflets 😉
